So This Is What We're Eating This Week...

I'm trying to get back on track with meal planning and freezer cooking after the holidays. As always, cooking dinner and cleaning up is the bane of my evening, even though I really do like preparing meals (not so much the cleaning). Our evenings are just so crammed after work, and getting into some routine again will be really helpful as we are going to attempt getting more sleep. So, here is our meal plan for the upcoming week- hopefully it will keep me on track!

 
Monday~ Chicken Cordon Bleu Casserole, rolls, and salad
Tuesday~ Small Group (we're bringing cheese & crackers) or grilled cheese and tomato soup
Wednesday~ Chicken Enchiladas, rice and beans, tortilla chips and guacamole
Thursday~ Leftovers
Friday~ Homemade pizza w/ peppers, onions, and chicken
Saturday~ Meatloaf, mashed potatoes, and fresh green beans
 
I'm planning to make as much ahead of time as I can and freeze a couple of the meals so that I can cut down on how much I have to do in the evenings!

Prepping for my week: {freezer meals}

I've been trying to prep and freeze meals for a week or two ahead of time in an attempt to streamline my cooking in the evenings. Actually, in an attempt to streamline my life. Our evenings suck and go by super fast. I hate filling them with cooking and cleaning it up- it's exhausting.

So, a few weeks ago I tried out freezer cooking for pretty much a whole weekend, to see how it helped me out. And...It. Was. Awesome.

I mean, I pretty much ate up my whole weekend shopping and prepping and cooking, but it was an investment of about two weeks worth of meals so I was happy. I forgot to take pictures that weekend, but I am planning to do it regularly now (maybe not so much at once, actually) and I will document as I go. Below are the links and my thoughts about the recipes that I used...plus a pic or two of a new recipe that I tried and threw in the freezer this afternoon for Thanksgiving week in all of it's busyness.

This list lasted me about two weeks, and cost about $95 for all of the ingredients and disposable pans.

This next one is a recipe that I made for the freezer this week. I had gotten all of the items I needed for it on sale and with coupons, so the whole thing probably cost under $5! I didn't follow the recipe to a "T," but used it more as a guide for putting together the ingredients that I had on hand.

What's on the Menu 9/30- 10/6

Here's what we're eating! It's been a while since I've posted regularly, so I'm hoping to be up and running more often in October. :) Do you have a menu plan? Feel free to leave a link to your menu post in the comments!



Sunday- We went to some friends' for dinner, so I didn't have to cook! Yay!

Monday- It's band night for hubby, so we just grab something on the road. Nice part of not having kids: we don't really have to plan anything for dinner if we have things to do. Bad part: we eat more Wendy's than we should.

Tuesday- Small group- we are bringing salad toppings. This will be a good way to use up some end of season garden tomatoes!

Wednesday- Chili and cornbread- hoping my crockpot doesn't burn my food this week. I really don't want to buy a new one. :(

Thursday- Fish tacos with rice and mango salsa

Friday- Meatball subs and salad

Saturday- Beef stew and biscuits

Make ahead and freezer cooking- This week I need to keep dealing with garden tomatoes and figure out what to do with those. :) Also, I'm going to make Freezer Lasagna Casserole, cookies, and granola bars. Hopefully.

What's on the Menu {9/2-9/8}

We had family in for the weekend, so we've been winging it a bit with with the meal planning. Here's what we are eating!

Sunday- Out to eat

Monday- Hubby made an awesome meal of pan fried chicken topped with shallots, peppers, and mushrooms, mashed potatoes, and fresh green beans. Yum!

Tuesday- We stayed in and had leftovers and ice cream. :)

Wednesday- Spaghetti with sauteed chicken and grape tomatoes, garlic bread

Thursday- Mike has band and I'm gonna dig into the leftovers again :)

Friday- Chicken tacos, chips and salsa

Saturday- Mike's band has an outdoor festival, so we'll eat there!

We're definitely keeping it simple this week!

Make ahead/freezer cooking- Finish tomato sauce (I finally blanched and cooked down the tomatoes!) and can it; make cookies and zucchini bread; chop and freeze the bell and banana peppers from the garden.

What's On The Menu {8/26-9/1}



Here is what we are eating this week! I am super excited about my sister coming to visit me from Florida, and bringing with her our other sister's baby, who I have not seen in about 10 months! We have a fantastic week planned, and I am looking forward to cooking for my family!

Sunday- Eggplant parmesan, sausage and spaghetti Or get horribly sick and do nothing, make nothing, eat nothing. Poor hubs had PB & J. :)

Monday- Hubs has band; I'm eating leftovers. :) And then hopefully doing my freezer cooking!

Tuesday- Small group- We are bringing toppings for subs- Yay for using up garden tomatoes!

Wednesday- Freezer Lasagna Casserole (eating quick, then going to pick up the sister at the airport!) Think I will make a small eggplant parm on the side this night- we really have to use it before it rots!

Thursday- Chicken and lemon-garlic green beans with red potatoes

Friday- Chicken enchilada stuffed zucchini boats (Never did get to these last week!)

Saturday- Homemade pizza

Breakfasts- Pancakes and bacon, oatmeal and fruit, French toast and potatoes, zucchini bread

Lunches- Lunchmeat sandwiches and fruit, grilled cheese and soup, leftovers, salads

Make Ahead/Freezer Cooking- I confess, I did not blanch, chop, and freeze my tomatoes- so I really need to do that before they go bad! Same with shredding and freezing my zucchini. That's my main goal this week, because I am getting ready for company!

What's on the Menu {8/19-8/25}

Here's what we're eating this week! I need to try to incorporate some garden goodness into the plan, since my fridge has been taken over my zucchini and tomatoes!

Sunday- Freezer Friendly Lasagna Casserole and garlic bread (We never got to it last week!)

Monday- Leftovers for me, and either leftovers or the drive through for hubs on the way to band practice.  :)

Tuesday- Small group...not sure yet what we are supposed to bring!

Wednesday- Friends are coming over for a camping planning meeting! Pretty excited! We are going to have Tator Tot Casserole.

Thursday- Chicken Enchilada Zucchini Boats and cilantro- lime rice

Friday- Homemade pizza and salad

Saturday- Sausage and chicken on the grill, roasted potatoes

Items to make ahead: Blanch, chop, and freeze tomatoes from the garden so that I can save up enough to make a big batch of sauce to can! Also, chop and freeze garden bell peppers. Make some more whole wheat rosemary pizza crust to freeze and have on hand.

What's on the Menu {August 12- 18}

I am trying to incorporate a lot from the garden, since it is doing so well. That's awesome, in theory, but it does add a lot more food prep time. The whole "seed to the table" philosophy is no joke! It's no wonder that a woman's life in the old days, or even in some cultures now, revolved around meal preparation! Some days I feel like that's me! Even if my hunting and gathering takes place at Giant Eagle. :)




So here's what we're eating this week:

Sunday: We ate some homemade salsa, compliments of my talented hubby, with chips, and snacked on leftovers. We had a heavy lunch so we weren't that hungry. And we have no children. I will remember with fondness the days where I ate chips for dinner around 8pm, as soon as I start having little ones. :)

Monday: Hubby has band practice, and so he'll grab something on the road after work. I taught after work and got home late, and ate warmed up pizza in front of the computer. Not much of a meal plan so far, eh?

Tuesday: We have small group on Tuesdays, and I am supposed to bring some sort of fruit dish. A great reason to do a little "research" on Pinterest later.

Wednesday: Baked tilapia, cilantro rice, grilled eggplant with tomatoes and feta

Thursday: Crockpot Italian chicken with potatoes and carrots

Friday: My friend Ashley is holding a Scentsy party at my place, and so I will be providing some appetizers and drinks. Hubs is fleeing the scene, and staying far far away from a house full of ladies buying pretty smelly things. I'm not sure what he'll eat. :)

Saturday: Lasagna Casserole, garlic bread, salad

Freezer/Make Ahead Items: I HAVE to chop up and freeze the banana peppers from our garden before they go bad. I will. I must. Also, shred and freeze that massive amounts of zucchini. Also, figure out something to do with our cucumbers. (Only one plant next year, I promise! They're everywhere!)

So, this is obviously not much of a cooking week for me! I am trying to let go of having guilt feelings during a busy week, and go with it. Enjoy this time in our lives where routine isn't all important. It's hard for a girl like me. :)

What's on the Menu: 1/29- 2/4

I was feeling pretty low on cooking inspiration a few weeks ago, when I started trying recipes on Pinterest. Last week, I tried a whole bunch of new things that I found on skinnytaste.com via Pinterest. I really LOVE recipe sharing! I love to cook, but I lack the creativity to whip up healthy, interesting meals on my own. These sites have been invaluable to me! Plus, I think hubby has liked every single one so far. Not that he's picky, but still, it's nice.



Here's what we are eating this week:

Sunday: Homemade BBQ Chicken Pizza w/ Pineapple

Monday: Homemade Chicken Nuggets, Roasted Potato Wedges (We ended up not having this last week)

Tuesday: Small group! I get off easy this week- I'm bringing drinks!

Wednesday: White Bean & White Wine Soup

Thursday: Leftovers

Friday: Skinny Salisbury Steak w/ Mashed Potatoes/Cauliflower & Mushroom Gravy, Tossed Salad

Saturday: Grilled Chicken w/ Lemon Basil Pasta, Tossed Salad, Garlic Bread

I also plan to try homemade granola bars, homemade English muffins, and Baked Oatmeal with blueberries & bananas. We'll see how it goes! I am really attempting to make as many "convenience" type foods that we like from scratch. We really don't do very much boxed, prepared, or convenience food due to my food allergies and trying to eat well. But in an attempt to go completely to a whole foods diet, I am trying to get rid of the few things I do just grab from the shelf. We may never be 100% there, but I think every little bit helps!

Creating a Home Management Binder- Part 2: Menu Planning




I grew up in a home that always had a homemade dinner every night, with the occasional pizza and soda on a Friday evening. I don’t ever remember eating fast food, or something from a package, or store-bought cookies. I’m not saying this to sound stuck up. I am simply thankful that my mother took the time to hone her own domestic skills, and also to teach them to us. I believe that her “old-fashioned” homemaking ways were a great gift to me and my siblings, and to our future families. I know now that lots of people have to learn to cook and plan meals once they get married or move out on their own.

Menu planning became more of a habit for me when I was working in the group home section of the agency I am employed at now. When you are feeding about a dozen people every meal, it’s important not to just “wing it.” Once I started creating meal plans for work, I found that I really liked it!

Planning your meals ahead of time has several benefits that make it worth the extra half hour it might take to sit down and create a schedule.

1)      It allows you to eat what you have. When you take time to prepare a menu plan, you can focus on using the items you already have in your pantry, freezer, and stockpile that need to be used up. This cuts down on waste.
2)      It saves you money. When you have a plan in place, you can build your grocery list from that. When you have everything that you need to complete a meal every day, there is no need to keep running out to the grocery store and picking up those last couple of items for dinner.
3)      It helps you track your family’s eating habits. Writing down what you are going to eat not only keeps you from ordering pizza too often, it helps you see patterns in what you are feeding your family. Do you eat starchy potatoes and carb-loaded pasta too often? Do you need some more variety in your veggies? Looking at your eating habits on paper can help you change them.
4)      It saves you time. You can altogether stop asking yourself, “What should I cook for dinner tonight?” or “What do I feel like eating?” When you have planned ahead, you can spare yourself the extra stress. You will begin to look forward to trying new things rather than always falling back on your same old casserole. Another way that menu planning saves time is by allowing you to look ahead and use your time wisely. Are you having pizza at the end of the week? Why not make your dough and stick it in the fridge when you have an extra few minutes. Fajitas? Chop your peppers and stick them in the freezer until you’re ready!

Creating a meal plan doesn’t have to be a focused activity, either. Throw some ideas onto paper while you’re sitting in front of a movie, or when you see something that looks good while you’re browsing through a magazine.

Try your best to stick to your plan, since the whole point is to streamline your life. But allow for flexibility. I know sometimes we are invited over to dinner at someone’s house, or late work schedules don’t allow me time to cook no matter how much I’ve prepped ahead of time. Sometimes in life, ordering a pizza on your way home is just the best option. That’s ok! When you are disciplined most of time, you don’t need to feel bad when your plan just isn’t working for you at that moment. Give yourself some breathing room. When I skip a meal on my menu plan, I like to rearrange and pick the meal that has the most non-perishable ingredients and move it to the next week. The key here is to still use those ingredients at some point in the near future to prevent waste.

Now that I have shared how passionately I feel about planning meals ahead of time, I’d like to share the form I use to plan my meals. I searched for a printable plan that I liked, and although there are some great ones out there, I couldn’t find one that worked for me. So I took matters into my own hands, and this is what I came up with! I wanted a menu plan that only planned my dinners in detail, but still gave me some space for breakfast, lunch, and cooking ahead. What's on the Menu: 1/22-1/28

Here is what we're eating this week! I have actually done pretty well with my grocery budget, and I'm excited about that. I'm being forced to get creative and see if I can make something rather than just buy it. I'm down to $65/week, but I think I might go over a little bit; I still need a couple of things that I don't think I can avoid buying.  :( Without further ado....

Sunday: Broccoli, Cheese, and Potato Soup w/Biscuits (We actually had this for lunch, and it was really good!)


Monday: Maple Roasted Chicken w/ Sweet Potatoes, Homemade Bread (From a mix, but hey, it's Bob's Red Mill, so it counts as "from scratch," right?)

Tuesday: Small group! We are bringing an appetizer and a dessert. I am probably going to make these interesting meatloaf cupcakes for our appetizer, and some cookies for dessert.

Wednesday: Chicken Rollatini w/ Spinach, Garlic Toast, and Tossed Salad

Thursday: Mike has band, and will grab something on the road, and I think I might be going out with a friend. We had to cancel last week, and band was also cancelled due to the weather....so we ordered a pizza. :)

Friday: Homemade Chicken Nuggets, Roasted Potato Wedges

Saturday: Cheesy Chicken and Rice Bake

What's on the Menu: 1/15-1/21

This is what we are eating this week! Since it's now Monday, and I've already made Sunday's dinner, I posted some pictures of my yummy results of a new pizza recipe! It was good! Not quite as tantalizing as the picture looks, but still really yummy.

Sunday: Grilled Tomato Basil Pizza
(I "grilled" mine in pan, since I had no desire to go out and use the grill in this weather!)

 








Monday: Chicken Parmesan, Pasta, Salad, and Garlic Bread

Tuesday: Small group! I'm bringing the tortilla shells and chopped tomatoes.

Wednesday: White Bean Chowder, Biscuits, Salad

Thursday:  I'm possibly going out with a friend, and hubby will be fending for himself on the way to his band practice.

 Friday: Lemon Chicken Breast, Garlic Mashed Potatoes, Broccoli, and Rolls
